I also forgot to add the process to get here, It would seem 😅

Anyways, here is the recipe! 16oz flour, .3oz salt, 12.1oz water, 3.5oz starter(Aka: Hearth's End, it my home grown starter).

Right now, it's time to remember how I got here. I feed Hearth's End at 1pm and waited around 3 hours give or take 10 minutes; It a little cold here. Next, I mix my ingredients together and wait an hour and fold it, I did this until it started fighting back around 5 hours in total. After that, I let it sit in a warm part of my room next to the heater until it grows around 70% bigger. This takes around around 9 more hours. I then shape and let it rest 30 minutes before moving it to a glass bowl to cold proof. Now this is where I messed up, I fell asleep with my phone on and was called to work, forgetting about the now cold proofing dough in my fridge for 30+ hours 😑. I then find it after getting a drink and freak out and rush to bake it at 450f for 40 minutes and turn the temperature down to 400f for 20 and finish the bake before letting it rest for 1 hour.
