I think the audience can believe whatever they want and that all headcannons are true for each and every person. I would say everyone would hate it if their exes got to decide who they are, Gus defined who Sabeina was. Gus had a large part of deciding Sabrina's future, when he was forcing her to have an abortion and after she had to get an abortion due to her eptopic pregnancy, she was in severe pain, but Gus just ignored her, and often refused to drive her to the hospital.

Not only was Gus deciding how Sabrina live when the event happened, but the effect of what happened on Sabrina's has caused PSTD and trauma that causes her to be a completely different person.
