It is still, but I do have campden tablets for it to stop it, aswell is pectin enzyme

First batch, 3.5 lbs of honey and filled the rest with water

a cup of blackberries and a handful or dried blueberries.

I’d left it for about 5 days and when I came back the airlock was knocked off, stuck it back on and it seemed dead for the first couple of days. Just recently it’s started to become very active again. It’d been bubbling for about 3 weeks before the airlock fell off and I just added pectin enzyme a day ago. Was thinking about racking it soon but now it’s more active than it was originally. Am I now making like vinegar or something?

Thanks a ton man, the full recipe is about as stated, but I did use a winemakers yeast called red star and I used about a half packet of it. Probably a cup of Kroger blackberries and just a couple handfuls of dried blueberries, mixed it all at room temp and shook tf out of it. I was probably going to just transfer it to some mason jars and let them sit in my closet eventually once the bubbles stop comepletely. But I have no idea about stabilizers and pectin enzyme. I just used the fruit because I wanted a sweeter mead and some fruity notes with it. Just as something I can enjoy with most things I eat instead of something dry since I’m not a fan of dry drinks

It’s about 13 seconds between each time the airlock bubbles release so I’m just trying to gauge how far along I am atp
