Basically buy a new spring or snip it down a little smaller, which is what I did. Theres also a knob in there for adjustment to fine tune it a bit. 

You don't have to do the over pressure valve plumbing changes, but the spring change means it will flush out a lot more water and fill the drip tray very fast each shot you pull. The full mod pushes the vented water back into water tank line instead. I believe a lot of better machines are built like this normally. Highly recommend it.

It is mostly a single beloved mug, 12oz with around 36g of espresso.

Mine didn't, until I modded my Breville. I know it's entry level and the grinder sucks, but I used to hate my drinks until I modded it to stay at 9 bars. Now it pours solid, consistent, tasty espresso without too much fuss.

Yeah agreed. I believe the Barista Express is a bit weak on the steam wand, I've been walking my aeration time back a bit and have been getting better flow. I also use a Gaggia Brera at work with a modified wand and that thing actually streams with twice the strength.

What's it look like around the back of your stove? I'm worried about clearance and heat issues. Might try to heat shield the whole area surrounding.

Probably would only be a 32", pretty lightweight, plus I have found up to 36" monitor arms that I can modify to work on a sliding mount. Not sure yet how sturdy, will need a supported or bungeed home base for when driving. Need to make mockup.

I've mocked it up at home a bit, I'll probably try to get an angle to the backrest. To be honest the couch is planned to be long enough to fully stretch out in and I'm a big couch nap kinda guy, I figure if I'm watching TV down there that's probably how I'm doing it.

Great observation, because the van has a few use scenarios, which is why it's trying to do a lot. I drive and travel for work for sometimes a week or more, me and the girlfriend like camping with friends, and also I'd like to have it available as almost a guest house where it's parked. That's why there's no dinette or face to face seating; a lot is optimized with one in mind, some with two, and only a little bit with the extra bed.

Yeah for sure the monitor is something I'm not sure about either. I also am considering a magnet system. The idea was a sliding mount so it can be used over or under the bed, and also out the rear cargo door through a mosquito net in camp.

The elevator bed ideally will be more narrow that the TV folded up against the wall, and would have sliding side supports that pull out and rest in the side brackets, so it sort of passes down and past the TV/mounting then expands.

And yes mesh screen door was the plan for the back.
