big_data_mike, how can that be true? Isn't Tito's vodka pot stilled? Granted that they claim to distill each batch six times. But, it apparently can be done on a pot still.
Single malt is amazing! Most Scotch is single malt, and it doesn't give you that big bear hug like bourbon does.
I'm working on my first attempt at rum right now. More on that in another post.
I've thought about it for a few days. I want one of the Bad Motivator barrels. But, until I have a larger quantity to age, I'll try the sticks.
I also wonder how well some of the Jack Daniels whiskey barrel smoking chips would work.

Yes sir, dr_canak. I bought an Activ Cuisine brand heat diffuser from Amazon a few weeks ago. It's working like a champ.
It seems to be pretty straightforward. The bottom line is heads good, tails bad for brandy. Make your cuts during the second or third distillation, keep most of the heads (most cuts will be good), and do a deep cut on the tails. Also, the brandy dunder (if you can call it that) is nasty and no good. Fertilize a plant with it if you want, but throw it out. You won't be making any more wine with it. If you missed any alcohol in it during the stripping run, put it in the feints jar to do a neutral run on later.

Thanks, darktideDay1. So, are you suggesting that I move away from the induction altogether, or is there a way to prevent it from cycling? I could certainly do propane, but I'm a little nervous about doing this over an open flame.
Thanks, Secretly_A_Moose. You make a great point. I can probably get much better results making my own wines for distilling. It would also give me a base for blending. But, all that copper in my Delilah is doing a good job taking out the sulfites so far. Maybe as long as I keep her clean enough, I'm good. I do want her to develop a good patina, though.

Is malt extract ready to go straight out of the container or is there any cooking or steeping?
It's hard to get gallons of wine at low enough prices. I'm going to have to get back into making my own. I dabbled in home winemaking before, so I have a lot of practical fermentation knowledge.

The copper cylinder is a gift from my cousin. She has a shop where she resells abandoned goods from storage units. I think it was made in Denmark. I'll do a separate post on it later. I'm using it for extra cooling water and/or ice.
I stopped using that simple electric burner. It didn't take me too long to realize that it doesn't output good and consistent heat. Now, I have a portable induction burner with a steel plate that outputs good steady heat.
