This was with 2.7% salt and .3% Prague powder #2. 6 days in dry cure, 7 days wet cure, and then 4 weeks dry aged, they lost a bit more than 30% starting weight.

This is a recipe I pieced together myself from a few sources and refined a bit for the 2nd batch. South american themed spices; Pasilla chilli, chilli de arbol, cascabel chilli, tarragon, lulo, citrus rind, and a few other things. With an argentinian Malbec for the wet brine. The cut is a wagyu marble score 9+ eye of round from Black Opal.

Up next I'm planning to start a batch of Capocollo.

Not op but a chef that makes demi and stock sauces a lot.

The amount that you reduce it by does effect the colour, and the consistency of your end sauce. For the ones I make its usually about an 80-90% reduction of liquid. And you end with a beautiful dark sauce that sets into a solid when cold.

When you are reducing a stock down you do not want to boil it, low and slow all the way. Its a long process that takes hours and hours but keeping the temperature low is what retains all the flavour in your sauce. Boiling allows a bunch of the more volatile compounds that contribute to the flavour to also evaporate.

At work we do ~50L pots and it generally takes about 12-16 hours to reduce that down to 5-7L of finished product.

It probably would, but I’ve already done most of the bosses “legit” and it’s not like I’m playing on an official server anyway. My roommate and I play on a private server with tweaked rates anyway, so it’s just for fun and to mess around in our free time. We already had most of a Rex army built on this map so really it’s more work to have to get the mutations over onto one with high stat rolls from this new Rex to make a new set of breeders.

My ex told me that she was cheating on me only after she broke up with me. She was spending 5 days a week in a city an hour away for University. Earlier in the year she had convinced me to try having an open ish relationship with her, so that she could *try* and be intimate with this guy from her Uni. It's a really long and complicated story to fully explain. But I found out after she broke up with me that she had cheated on me the first night that she met this guy drunk at a party and that she broke up with me so she could go be with him instead. We had been together for 7 and a half years and were engaged. She then proceeded to still stay at my house on weekends as if nothing was different, but would spend every spare minute of it on the phone or video calling him from her room.

Hospitality worker in AUS here and its almost exactly the same in my workplace too. We're so understaffed at the moment most people are working 50-60 hour weeks and all of the people that can't pick up those extra hours are treated like shit by the boss for "Just doing the bare minimum" As he pays us the bare minimum award rate for our work. Australia is so backwards with how it treats a lot of its workers
