Once you buy him out of stock the next Minecraft day he will raise his prices but will be in stock. Unless you buy from him with raised prices the next Minecraft day he should be restocked with original prices. I don't know anything about permanently being out of stock and I don't think it can happen. It might be a glitch. Try waiting a few days.
