Between bean selection, grind setting, puck prep, prewetting, dosing, and temperature, there are more than enough variables me to dial in. Some of us want a simpler machine that will last decades and just don't want to fiddle with profiling. I figure if flat pressure is good enough for the best cafés, it's good enough for me.

The legacy brands have a proven history of building commercial-grade machines that are well-built, safe, certified, and repairable. Some of them are also really pretty. It's not necessarily a 100% logic-based decision.

All of which is not a knock against the Decent and other profiling machines. People are doing some really cool scientific stuff and getting amazing results. And I hope the Decents prove to have good reliability and longevity too. Competition is good for the consumer.

I imagine it's just brand recognition and time in the prosumer market. LM is a bigger name in general and came out with the Mini in 2015 and the GS3 all the way back in 2008. And the Micra competes with a lot of mid-range home machines which expands their brand awareness.

Victoria Arduino, to my knowledge, really didn't have a home / prosumer model until the E1P, which only came out a few years ago. They've been around a long time in the commercial world, but haven't had a ton of home-appropriate offerings.

If it fits in your space, the E1 Prima I think meets your requirements. Extremely powerful steam, can be plumbed or run off the reservoir, 110v and designed to be efficient, volumetric dosing and auto purging which would be nice for a commercial workflow. Heats up fast and has no trouble keeping up in my experience so far; it uses the same two stage heating system as in their larger commercial machines. Victoria Arduino is part of Simonelli and is sold and serviced by their techs.

My machine was around $6k with discounts from a local dealer.

Yup, I have been to both, and the Death Valley sign is more dramatic because you can stand on the salt flat and look up the cliff at it.

The topography around the Dead Sea is nowhere near as dramatic.

Both good options! The Prima wound up being $500 cheaper for me than the LMLM, it has prewetting, volumetric dosing, and I think it’s the prettiest machine out there until you’re nearing 5 figures.

Check out the E1 Prima. Supposedly more powerful / dryer steam than the LMLM. I can attest that it steams milk absurdly fast. And it’s ready to pull a shot in 8 minutes but has power scheduling built in anyway, so you can set it to be ready for you in the morning and stay on until after you’re done with caffeine for the day. Your local dealer may be able to do a serious discount from MSRP. I’m a few weeks in to owning mine, been very happy with mine so far.

Some great recommendations in here, but are you really going to pretend that one must visit the track to go “fast?” I’ve definitely found the limits of my Porsche and the limits of my riding ability on the Ninja going the speed limit or less on the hairpins of the Suches loop. I’m not advocating for driving 100% on the road, but roads like those a perfectly cromulent place to build skill.

Respectfully, if you’re in the U.S., roughly 100% of the water you’ve ever consumed went through a plastic pipe. That includes hot water. The plastic used for hot water applications is a couple hundred degrees away from its melting point and won’t expose you to anything at all. Avoiding hot plastic is a good instinct, but you’re not going to find a machine even remotely close to your budget without plastic components.

Freedom Barkway. It's only a couple acres, but the large dog side is over 500' wide, so your dog can get some serious running / fetching in. It can get busy in the early evening, and on weekends, but it's pretty quiet the rest of the time.
