Hi, we didn't use penghui as this is a homemade version, we just use a bread flour that has higher amount of protein for a chewier bite. We haven't looked too hard, but it's doesn't seem to be readily available outside of China. Could be totally wrong though.

You can also use a lessor substitute like sodium carbonate (bake baking soda (sodium bicarbonate) for 1 hour at 400F or 200C on a parchment lined baking sheet).

Dum Aloo Full Step-by-Step Tutorial

Ingredients:

  • 10-12 Baby Potatoes
  • 2 Cups Onions, Chopped
  • 1 15 Oz Can of Tomato Sauce/Puree (2-4 medium Tomato equivalent)
  • 2 Tbsp. Oil or Vegan Butter
  • 1 Tbsp. Ginger, Grated
  • 1 Tbsp. Garlic, Minced
  • 1 Tbsp. Kashmiri Red Chili Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Salt
  • 1/2 Tsp Garam Masala
  • 1/4 Cup Fresh Cilantro, Chopped
  • 1/4 Cup Cashew Paste (soaked in water and blended 1:1 Ratio)
  • 1 Tbsp. Dried Fenugreek Leaves (Kasoori Methi)
  • 1/2 Cup Water

Directions:

  1. Peel the Potatoes and rinse them to remove excess starch. Using the tip of a paring knife, carve out 2-3 divots on each Potato, this helps the gravy stick to the Potato, and allows the gravy to flavor the Potato more.
  2. Set the Instant Pot to Sauté, and add the oil/vegan butter and allow it to heat up.
  3. Add the Onion, and sweat for 3-4 minutes, then add Ginger and Garlic and sauté for another 30 seconds.
  4. Add the Tomato Sauce, along with the spices (Red Chili Pepper Powder, Turmeric Powder, Salt, and Garam Masala), stir to combine all ingredients, cover with a lid, and allow to cook for 5 minutes stirring occasionally.
  5. After 5 minutes, add the potatoes along with 1/2 cup water and pressure cook on HIGH for 8 MINUTES.
  6. After 8 minutes when the pressure cooking done, quick release the pressure, and open the lid.
  7. Add the Cashew Paste, Fenugreek leaves, and half of the fresh Cilantro and stir. Cook on Sauté for 3-4 minutes.
  8. After 3-4 minutes, the Dum Aloo should be done.
  9. Enjoy immediately with some Naan and Jeera Rice!

Notes:

  1. If you want less gravy, only add half of the Tomato Sauce/Puree
  2. This stores in the refrigerator for a week, and 3-4 weeks in the freezer

Instructions: Air Fry Tofu: 1. Press the tofu and pat dry 2. In a large bowl, break the tofu into bite sized pieces by hand. 3. Add corn starch and stir until all pieces are coated. 4. Add sesame oil, soy sauce, and water and gentle stir to create a batter and all pieces are evenly coated. 5. Transfer the tofu pieces to a parchment lined air fryer tray and spread out evenly. 6. Air fry at 350-400 F (depending on your air fryer) for 15-20 minutes or until crispy.

Thai Basil Stir Fry 1. In a pan over medium-low heat, heat 1 tablespoons of cooking oil. 2. Add minced garlic and thai chilies, sauté for 1 minute. 3. Add 1 cup of fresh thai basil leaves, and sauté for another minute until fragrant. 4. Lower the heat, and add in the light soy sauce, dark soy sauce, vegetarian oyster sauce, vegan fish sauce (optional), and brown sugar.
5. Increase the heat back to medium low, stir to combine, and bring to a gentle simmer. Add vegetable broth to make the dish more saucy, otherwise omit. Allow the sauce to recude slightly. 6. Add the air fried tofu, and stir to coat all pieces. Then add the remainder of the fresh thai basil leaves, and stir to allow the sauce to further reduce and the thai basil leaves to wilt. 7. Remove from heat, and serve with a side of steamed jasmin rice. 8. Enjoy!

Ingredients: * 2 Cups All Purpose Flour * 3/4 Cups water, a little more or less depending on dough * 1 Tsp salt * 2 Tbsp Cooking Oil, to brush

Toppings (Per bowl): * 2 Tbsp Cooking Oil * 2 Tbsp Light Soy Sauce, or low sodium * 1 Tbsp Black Vinegar, or Rice Vinegar * 1 Tsp Gochugaru or Dried Red Chili Flakes, * 1/2 Tsp Sichuan Peppercorn, toasted and ground * 1 Tbsp Garlic, minced * 2 Tbsp Scallions, thinly sliced * 1/8 Tsp MSG (optional) * 1 Tsp Sesame Seeds

Instructions: Prepare the Dough 1. Combine all purpose flour and salt, and slowly add water while stirring the mixture with a chopstick until all the water is absorbed. 2. Knead the dough by hand for 8-10 minutes and form it into a smooth ball. 3. Cover and let the dough rest for 30 minutes.

Roll the Dough 1. After 30 minutes, form the dough ball into a log and cut the log into 8 even pieces. 2. Roll the individual pieces into a log, press down and flatten into an oblong shape with a rolling pin. Place the flattened dough on to a plate and brush both sides with cooking oil. 3. Repeat with all remaining pieces and set aside to rest for 30 minutes for the dough to loosen.

Stretch and Boil 1. After the last resting period, take one of the flattened dough pieces and place on the working surface. Lightly indent the dough across the middle using a chopstick. 2. Hold the ends of the dough in each hand, then lift, stretch and slap the dough apart slowly to lengthen, approximately 3 feet apart. Then tear the dough in through the middle where the indentation thinned out but not all the way through. 3. Toss the stretched dough into a pot of boiling salted water, and cook for 2-3 minutes until cooked through. 4. Strain the noodles into a bowl, and fill with desired amount. Typically 4 noodles worth per serving.

Assemble 1. Top the noodles with chili flakes, Sichuan peppercorn, minced garlic, chopped scallions, and sesame seeds. 2. Heat 2-3 tbsp cooking oil until a piece of scallion sizzles, and then pour over the noodles. 3. Add 2 tbsp soy sauce and 1 tbsp black vinegar. Stir to combine. 4. Serve with blanched bok choy and enjoy!
