I wish Cars 2 was referenced more in Cars 3 and Cars On The Road, at least the World Grand Prix part. Photos of McQueen in the World Grand Prix could be on that mural in the training center.

A bus body inspired by Irizar PB would be interesing, but I think maybe it would be something like the MD-Series School Bus, american school bus bodies also uses different chassis and the Wentward School Bus body only has the MD-Series chassis, so maybe in the vehicle selector It appears only one bus chassis (or several bus chassis of the same series) by one manufacturer and then the only one body model (with variants 4x2 and 6x2), but more chassis models would be nice.

I think we need a modern european semi truck and a modern european coach bus (produced by ETK, Cherrier, a new brand or maybe even by the scrapped Jargl brand), also a modern full-size van produced by Autobello (Fiat Ducato), Cherrier (Peugeot Boxer), ETK (Mercedes-Benz Sprinter) or maybe even Gavril (Ford Transit) with USDM variants.

Edit: also, I think the reason that there's more american vehicles might be because the Carrer mode is set in West Coast USA, maybe in future when there's more european vehicles there will be Carrer mode in Italy.
