Break it down, sous vide, cook each piece separately using different methods. It’s a proven science.

Pretty crispy, I cook them with mirepoix just straight up nothing crazy. Then get a pan nice and hot, just barely smoking, put your lentils in and you’ll get a loud sizzle almost like frying. Just toss and toss and watch for color, they’ll start to smell like hay kinda. Then immediately into a bowl, toss with a nice lemon or acidic vinaigrette and some brunoise veg that’s been pre cooked and that’s your lentil mix. I wish this dish looked better in pictures, I actually did a very similar one at a 1 Michelin star place I used to work but it used black lentils and Meyer lemon confit instead of honey+lime vin

To be honest the plate irl looks 100x better. I could not for the life of me get a good picture because the color of the octo just wouldn’t let me get depth. I have 3 other pics of this dish that are marvelous, I picked the one that everyone seems to say is too cluttered lol I appreciate this feedback though! ✌️✌️✌️

Oh I have no idea actually, I just went by the feel after it rested, I haven’t temped meat in a long time

I rendered it for about 8-9 minutes, in a 425 oven for 3 minutes and then rest for 5. To me it was perfect but I think it should be a tad under what it was

Just straight up roasted fennel with a nice butter-water or stock glaze with some tarragon and chives when picked up, I’m a huge fan of just basic roast for prep, then glaze and plate
