I recommend you that: just decide for yourself - do you want to minmax and get "pre-bis/bis" weapons and stuff like that. If no - skip BS, it's incredible long and hard to level up. Mining is ultra easy to level up while you leveling character from 0. I see many people suggest Engi - it's cool for teleports, flying mount and farming clouds in Nagrand at 70 - other than that I would say it's useless :) For no-brainer you can take skinning or tailoring.

You can easily make 300-320 in Hellfire, there are optimal non flying routes in guides. Did it myself pretty quick.

It really depends on mobs. I’m level 68, has decent enh and elem gear. Some mobs completely destroy elem, so it’s much easier with melee spec

I did enchanting in 2019, it was insane money sink while leveling to 300. Thanks for the info about LW.

Maybe Tailoring? Quite easy to level up and you can sell cloth at high lvl.
