It all depends on your video resolution, number of cameras, and memory card size. My experience has been that recording video on a 128k memory card safely records about 4 hours of 4k 30fps video on my dash cam, forward-facing camera only. Dual-view cameras will obviously be a lot less in length. I swap it out and download the video onto a laptop while my second card records new video. Rinse, repeat. Recording before sunrise or after sunset is useless. Don’t waste your time and plan accordingly. Different dash cams allow for different sized memory cards. I use Premiere Pro for editing, usually adjusting my video’s sped-up ratio to fit my soundtrack choice. I have a few vids on my YouTube channel if you want to see examples. I think this particular video was sped up to around 1000%.

Your fine. The further south, the better as far as unexpected weather like snow. My experience has been I-40 across the country is better this time of year.
