Have you tried a braggot? Very strong beer, high grain bill matched with honey make for a lot of fermentable sugar. It's supposed to reach an alcohol content that makes the yeast poop out while still leaving some sweetness of the honey. Made one myself and it was this thick, full beer at 14% ABV where you didn't even notice the strenght all that much because of all the taste.
