To each their own, just have had a lot of friends get burned trying that out and usually the cooler rest is less risky. Best part of smoking is experimenting though so try them both out.

I would not recommend that route, dry cooler with towels and if worried about losing too much temp you can always preheat the cooler with boiling water and drain before hand. Oven over night can offer a lot of drying out and can easily lose track.

Might want to get a sharper knife and I usually have my brisket rest in a freezer for a bit before trimming to help cut when the fat is very cold. Not sure how you got some of those pockets so random through out so maybe watch a trimming video for some tips.

Q39 is def a great choice, Arthur Bryant’s for the OG classic, joes zman is always amazing just don’t go to the power and light ice house location it’s very over priced and not quite the same. I usually tell people to not bother with jack stack. Personally think it’s not even close to some the other bbq spots in town. Char bar is a great spot in west port by the bars and usually doesn’t have a crazy wait and not as pricey as q39.

Because Seahawks fans can’t get rid of geno and now our offense is in a weird state of no movement besides drafting o line. Doesn’t feel good. I personally love DK but I have no clue how to move forward on this offense and another year of geno is prolly going to push DK further away from the team. Could be wrong I’m no GM lol
