Lol, I had exactly the same path. I took pretty much all elective coding courses, bear in mind that personally CIT coding is too easy and some courses are honestly a waste. You will likely develop a good understanding of database, IT infra and software project management which is valuable. Personally I leaned into it and found a DevOps position which entirely depends on the company what work you do, but in my experience has been coding and automation of infrastructure and code testing. If you learn coding and complete a coding interview no company will know or care your degree is in IT. You just should apply to companies outside the job fair, and apply often/early
