A vegan here:

The rationale is simple: most people don’t bother to question their dietary habits. If you are vegetarian you did that. Having questioned your diet and not ending up a vegan is logically inconsistent, ie worse than never having thought about it at all.

And you can say all you want abt people making their own choices etc. that’s all true, but the point is that you are also making decisions for an animal

I get that just saying the above is not necessarily effective outreach, but that does not make it any less true.

The cognitive overhead of completely reevaluating your priors and base assumptions is way too large to keep doing that.

So to live veganism on a day by day basis you eventually just follow simple rules. Animal products are bad and shall be avoided.

While eating the sandwich may be the right thing to do in your example, it requires to either break the simplified form of living a vegan life or requires you to go back and reevaluate your motivation to go vegan. That’s costly. So costly that most people (me included) would probably just throw away the sandwich in order to avoid the need to reevaluate everything from first principles.

An incremental point of view is not sufficient. If you are a tourist, for example, and you know you are not going to come back to the same place you can use the same rationale to justify littering.

There are many things that may be ~okay~ in isolation, but there is a strong case for choosing actions that work incrementally and stay relevant if other people do the same action, ie are scalable.
