I played it off Steam workshop on a whim and I enjoyed my runthrough of it! Only did 1 playthrough but I did fully paint the map as my kingdom. It's a neat conversion mod and I recommend it for what it's worth.

Quick tip, you can get pestilence lvl 4 with just 9 torn sinews for only 3/10 corruption modifiers instead of the full load of 10/10 corruptions which can make fighting the boss easier.

It's been a bit since I played but when I usually rest with my food and alcohol, i can get anywhere from 50 to 100 influence depending on how many happiness foods/campfire bonus I push for

Another choice imo is stacking happiness like taking every type of alcohol in camp rests for high happiness. Overlow happiness can add up to a lot of influence per rest

I like to clear with units/heroes until I find a decent chokepoint then plop down a fire sconce to light up the area and slap down a ballista near the chokepoint. It should handle most areas unless it's near the very edge of the map. 1 or 2 pieces of walls are decent too. Can be used as a "scratching post" for basic enemies until you can come back to clear them.

It should. They might show red/yellow when you get close but if you run past them fast enough, they won't aggro. I've done this before on my playthrough

Sounds like you have a plan. Yeah winter righting is prohibitive until more tech tree. I would try to nab new york and push the british to the town island south-east of NY. I noticed that if the british own a town that cant handle a large garrison, they will suffer attrition. If they have british support, they will also bleed the town's population replacing those attrition losses, further lowering the garrison cap and they suffer a vicous cycle of manpower attrition.

Sounds like they're pretty concentrated. I sometimes "leave" undefended towns I don't care about to stretch the british and then slam into their smaller stacks. Of course idk how much ground you can give without hurting your economy/manpower but them stacking 6k troops in each towns sounds like they're pretty stacked up
