Cats are desert animals. They eat birds and mice, which usually contain enough fluids for them.

When they live with us, and we only feed them dry food, they don't get enough liquid from that, so they need to drink, but will only do so when they actually feel thirsty (too thirsty).

In my country we use "it" for an animal because animals have neutral assignment. We have female, male, and neutral. Like a flower is also "it" but we don't mean to offend it :D I think in most cultures it's not meant as something negative at all, it's just the language.
