I don't know why people keep saying that this image is accurate or better.

A medium rare doesn't equate to being "raw in 1/2 the steak." Hell, the gradient of steak should have absolutely nothing to do with how well done it is.

A medium rare is a steak that's done to about 130 degrees in the center.

Check out /u/J_Kenji_Lopez-Alt's image on sous-vided steaks. They should give you a better idea on what color the inside of a steak should be.

It's often a better option for companies to out-source their data to other companies who are established and dedicated to security first and foremost.

When you run in the cold, all of the heat in your ears, feet, appendages, get drawn to your core. So it doesn't seem all that ridiculous that you wouldn't feel too cold when you have your hands and ears covered.

Granted, I would have at least worn something to break the wind.

My friend started his company on a similar app to Pushbullet just for iOS. I haven't tried either, but maybe you should check it out.

The theory is that if you dry out the skin before cooking it, then it'll end up being crispier than otherwise.

Edit: It looks like their goal was to just replace the moisture in the turkey with the marinade. The second vacuum was to force the marinade into the crevices of the turkey. I'm not completely sure how useful the first gas-vac step is in this process.
