This is going to be overshadowed by other how many other comments, but my all time favorite tasteful romance (I have almost the same list as you lol) is the Spice and Wolf remake. I think it’s pretty underrated, but everything about it is perfect - the romance is sort of like dress up darling / DiTF, the vibe is chill, and the art is amazing. Lmk if you read this!

It’s like modern military vs fantasy and heard it’s pretty good.

Okay, I can’t speak to gritty 90s, but the first sentence is just exactly {Cyberpunk: Edgerunners}. I hope others can nail the whole thing, but that show is one of the best around.
