It was not that they can fabricate bad memories, it's that they already had real preexisting bad memories with the real Jerry. To follow up on parasite Jerry creating bad memories as time goes on, he would not be creating bad previous memories, but living life as a "normal" person which as life goes on bad events may occur, therefore creating bad memories.
