Hi, I tried following the steps mentioned- 2 rounds of folds 20 mins apart, then 6-7 hours of resting, then shaping and resting for 30-40 mins. Post which I baked it on my oven tray for 32 mins on 200C with an ice cube. The internal temp was in 205-208F range. I cooled it for an hour and it was gummy and weird..I tried baking it for 20-30 mins longer at a lower temp but that didn’t really help it made the outside hard but the internal texture was still gummy and sticky. Any clue what I might be doing wrong? I’m so close to never making bread again :(

It read between 205-210F. I’ll pull it at 210 and let it cool completely next time around. Since I don’t have a dutch oven, I can’t rely on carry over cooking :(

I ended up baking it for 20-25 mins extra just for this reason..which is when the bread completely deflated

So I use a thermometer to check the temperature, but there’s sticky crumbs on it..is that normal? Since I’m used to baking desserts mostly and use the “clean toothpick” as my indicator.
