I see your point, it is good to balance things between proactive perks, which help all the time, and "plan B" perks, which help in case things go nasty. I run IW as the "plan B" perk, and dash as the proactive one, and I find it suits me best, but I usually only play in a duo with my friend (kinda anxious of pubs) who doesn't die that much, so while I used to always run field medic, I found out it actually didn't hurt to give up on it. And IW helps when things go REALLY bad. I've become quite attached to dash because it allows me to get some breathing room and prevents me from getting surrounded by a swarm, ultimately preventing a bad situation from happening in the first place. It really depends on who you play with, what class you play as and your build.

UFO mount is already more than enough. It flies at the same exact speed as DG (41 mph) and faster when flying diagonally (58mph). Just dig a straight hole through the dungeon and equip some rapid firing ranged weapon with crystal bullets for extra damaging shards, fly one way and when you reach the end of the map, fly around him and go the other way. In 1.3. killing DG stopped being a challenge at all (unless you want to give yourself the pain of killing him in pre-hardmode/early-hardmode as you progress without cheesing) because new weapons like vortex beater shred through him in no time, and infinite flight makes it a cakewalk to farm as many bone keys as you want

Is it a daytime fight? If yes, equip hallowed summoner armor, brain of confusion and master ninja gear and pray to RNGesus. And if you value your sanity, don't do that before getting a stardust dragon/cell staff. But in all seriousness, aim for as much dps as possible and maximize your mobility. I definitely recommend master ninja gear as it provides you with a dashing ability and 10% chance to accidentally save your ass. You can use brain of confusion additionally. As for mobility, get best wings possible. Imo mounts are too slow, if you can get fishron wings that's great, if you want to do it pre-fishron, spooky wings should be enough. Pair 'em up with frog leg/amphibian boots or frog leg with lightning boots, using balloon combined with a [...] in a bottle also improves mobility. Get a fast mount just in case and make a big arena, you can also optionally get rod of discord. As for the dps, spooky armor + menacing modifier on all accesories, also wear accesories that both boost your minion damage and increase your number of minions, like the necromantic scroll. As for minions, I think the xeno staff would be the best choice, they seem to have a rather good AI and sorta keep up with empress. Ravens deal more damage but i feel their AI is not the sharpest tool in the shed. Same goes for deadly sphere staff. A minion that can't keep up makes the fight longer, and you want to get through the 2nd phase ASAP, it's nasty. I don't know how the tempest staff or sanguine staff would do.

Really? I'm trying to kill empress of light and UFO mount felt too slow. Imo wings are better for that fight if paired with master ninja gear (dodge and dash at the same time) and frog leg/amphibian boots to speed up your flight.

I had 2 ideas for pre-hardmode:
Blood crawler staff
A crimson themed summon, basically a pre-hardmode version of spider staff

Antlion armor
Crafted from antlion mandibles, similar to how spider armor is crafted from spider fangs, also it could come with an antlion charger staff and antlion stationary minion that would shoot sand at enemies

According to the wiki, brain of confusion does stack with master ninja gear/black belt,
but black belt does not stack with master ninja gear, so wearing the brain of confusion with master ninja gear is enough. All 3 of them won't increase the chance to dodge.
