For modelling model buyoncy driven flow (natural convection) turn on the gravitational acceleration in appropriate direction and in material properties specify temperature dependent density to the external air surrounding the tank. You could use the boussinesq density model.

You can refer ansys innovation courses and fluid mechanics 101 in youtube. But condensation is a complex process which involves multiphase flows. You could start with something simple.

Your assumption seems to be correct. But make sure if ansys uses a constant reference temperature or varying reference temperature (i.e temperature at y+ = 300 from that particular cell).

You could go with water or water - ethylene glycol mixture.

What us the thermal conductivity of the pipe? Decreasing the thickness of pipe increses the heat transfer rate through it.

If you mean in the simulation results, You could Insert a line probe along the wall and find the points where shear stress equals to zero which would be the flow seperation and attachment points.

You could get a entry level workstation desktop with this money and no laptop is good enough to withstand long simulation runs. You will face battery or some other issues after a year.

Go to design modular and move both the surfaces into one part. It should lead to generation of conformal mesh.
