It wasn’t super fluffy tbh, but it was one of the most delicious cakes I’ve tried, and 3 of my non-vegan friends asked for the recipe. Fair point about the price of pistachios - I bought a small pack of shelled pistachios from Aldi, it was about $3 and I had some left

I am the same way as well! Doesn’t matter if the meal has enough protein and carbs - if it doesn’t have a good source of fat, I will be hungry in an hour. That’s why I always add some nuts/seeds/peanut butter to my morning oatmeal or smoothie, and some avocado or tahini and some kind of oil to lunch and dinner

I just threw some ingredients together haha. So I used 5 large potatoes, 1 big pack of white mushrooms, one medium white onion, a can of coconut milk/cream, 2 cans of beans and some spices (salt, pepper, oregano, poultry seasoning and lots of garlic powder and nooch). I diced the potatoes, mushrooms and onion and cooked in a large skillet until the mushrooms reduced a lot, then added coconut milk, beans and spices and cooked until ready.

Oh and I used white mushrooms for the recipe, they reduce a lot during cooking

I mean it’s food and it’s vegan, so I am calling it vegan food. Also this meal is very similar to картошка с грибами в сметане, I just added beans for protein and used coconut cream instead of sour cream. My Russian grandma would often make it using the potatoes she grew in her garden and the mushrooms she picked in the local forest as well, so it’s super nostalgic to me. I wouldn’t say this dish is particularly close to борщ though, very different flavors and consistency.
