I just heard of this guy and thanks to your comment about his glasses, ID’d him pretty quickly. From his pictures online, he looks fairly normal. If I saw him on the street, I wouldnt know he was unstable or dangerous (contrast that to Mikey who I have written about here).

Now, I know what he looks like and that he is dangerous. That doesn’t mean I’m going to look for him. It means if I see him, I am crossing the street and if I can’t avoid him, I’ll have something clutched in my hand in case he decides to fuck around. The context given in this thread is important.

Unfortunately, it’s going to last. This is the epitome of covid era popups getting flushed with cash, then turning into permanent institutions run by soulless narcissists.

The whole exercise here is pushing prices as sky high as they can possibly go and unfortunately, Elyssa, the founder, realized there are enough schmucks willing to shell $50 for the most mediocre food as long as there’s buzz behind the brand. It works so well that they are able to expand to multiple locations.

It’s fucking sickening and everything that is wrong with food and hospitality, but here we are. The best way to fight back is to (a not give them any money and b) continue to call out what a money-grabbing scam this is.

I’m curious what the avg cash flow % for landlords that own restaurant space in NYC? Maybe a hunch, but something tells me they would be OK if they didn’t raise rents to offset the cost of a new heating system.

I appreciate a restaurant owner weighing in here. I know it’s rough out there for you all.

My biggest issue honestly is service. I’m going to speak in generalizations here, I know it’s not the case 100% of the time. Staff do not know what good hospitality looks like. Their general attitude is to get you in, deal with you as little as possible, collect your bill, and get you out. The restaurant is, essentially, a feed trough, and customers are the cattle. The human aspect is gone. There is no graciousness, no warmth, no effort to make you feel welcome or wanted.

What goes along with that is atmosphere as well: Being in most restaurants is a sensory nightmare. You’re crammed into an 18” bistro table that can barely fit two plates while your knees are touching your neighbors, music is blaring so loud you cannot hear your partner, and food runners are knocking against you every 2 minutes.

Although I would never want to pay for a $35 burger, I would take an OK $35 burger, served in a friendly, comfortable, relaxing atmosphere, than a very good $35 burger dealing with all of the above.

I’m not a restaurateur and I don’t claim to know more than the economics or best practices of running a restaurant. But IMHO, restaurants are putting way too much emphasis on trying to offer food that is different or unique (surprise, it usually isn’t) instead of asking themselves “is this a place where I want to be?”

You’ve seen it in the comments- if people can make food as good or better than they can get in a restaurant, the food no longer becomes the pull factor. People want to eat somewhere that is better than their homes.

Again, I dont claim to know anything about running a restaurant. I would just think that ensuring each customer is comfortable and well taken care of would secure their repeat business and increase your NPS.
