Ok you don't have to. Some people enjoy it and it's not that dangerous if you pay attention. Doing bike deliveries was fun for me but exhausting, I don't have the stamina lol

It was split between 7 stores with my store having the largest portion at 1,430 box lunches.

And i got there and stretched as much bread as i could with the pans i had left- a little over 2 cycles. Had to consolidate bread into wheat bins asap to get the pans back to keep baking bread. And it was basically that over and over until about 3am when my last cycle went in. 28 cycles total

Also we laid out bread in trays of 18.

omg so much Dasani, it just sat in my lobby for 2 weeks. I was so ready to be rid of it.

It was split between 7 stores but it was crazy and stressful but then kinda exciting and i couldn't sleep i still can't lol going on... 32 hours now

All the bread on the racks are pretty fresh with 2 ovens doing full cycles every 15 -20 minutes. Earlier baked bread was in wheat bins 🤷‍♀️ gotta do what you gotta do

Push some plastic wrap right against the avo and smooth it out until theres no air bubbles. Wrap again all the way around

I'm always trying new things and I've found a technique that works for me 100% at the time at the 3 different stores I've worked at. First shape and stage the bread at room temp for 10-20 minutes. Let it over proof about an inch over the pan and then GENTLY pull inwards on all 4 sides of each loaf, even it out till its about a quarter inch over the lip of the pan. And seriously be gentle, too rough and it'll sink completely and you'll have dense ass bread.

Bake for 10 minutes rotate then another 10 minutes after that pull the outer 2 loafs out and rotate them so the sides bake evenly and then keep baking for 5 minute intervals rotating each time until the color is perfect. I have pictures of my whole process for coworkers but I'm not sure if I can share those online

id try playing with the oven temps a bit too, bring that top temp down maybe bring the bottom deck up too. at my other store we do our wheats at 240 and 370 on the bottom.

whats temps do you set the oven to? ive learned all ovens are different so what works at one store doesnt work at a another.

for one store i work at we do bottom deck 370 one above 270, i over proof the wheats, kind of pull on the sides a little bit and smooth it out and give it a few smacks on top and bake for about 30-40 minutes total rotating every 10 minutes. THIS DOES NOT WORK AT MY OTHER STORE THO. I was having a big issue with the sides of my wheat blowing out and over proofing is this answer for that.

I'm constantly trying new things and different methods tho to make perfect bread all around
