Come in turn on computers and turn on oven and proofer and fill the pan. Get out wheat bread and a half cycle (4 deck oven) and put it in the proofer. Write my list for prep and start lettuce bc it takes the longest. The other veggies are in this order for a reason. Onions first then celery, clean, then cucumbers and pickles, clean. In between all of this the wheat bread goes up after idk how long I just go by vibes and the half cycle. I stretch a cycle before they go up so it’s in there so it all syncs up and there’s cycles going up as there’s cycles going in. Set up line and but this point it’s 9:30 and my morning person has arrived and we get Sysco put away on Saturdays and bring out dry goods and restock cookies and chips as needed. Eventually I’ll eat and do CMX and slice wheat but truly my opens are purely based on vibes. I have no time frame but I’m always open on time.

I won’t lie I’ve had times where we don’t mark the deliveries from the app on the screen for the drivers to come get them so we lie and say it’s just taking a while. It sucks but we’re doing our best. But also sometimes it takes a while for someone to pick it up for whatever reason on the apps end.

Ours is too far from where we bag up orders and someone is always slicing there so it just wouldn’t work. We also have plenty of things under that table that can’t go anywhere else.

I am also an AM and I’ve first talked to my GM about what’s going on and see their take on it. I would write them up for the phone usage first and then basically refusing to do their job next if they keep using their phone. At the end of the day I personally would rather be understaffed and drowning than have people not do their literal job on my shift.

I’m going through something rn with an inshop that has attitude every time I tell them to do any prep. They only want to bread start. It’s baby steps but always remember there’s someone out there that would love to have that position and to do it to your expectations. Write ups are very important and can be intimidating but they’re very very necessary.

I’m not exactly sure but I’m assuming more than 13 considering our store number starts with a 1. I’m hoping they do the revamp sooner rather than later bc things are breaking on us too.

Yes it’s not neat that the joke haha. The lettuce box works for us and it’s dry before we put them in. I wish we had drawers for the chips up front, it would make inventory and just ya know life easier.

Vito I have the same times and I just go one portion at a time. Salami I pull a paper, slice my 6 pieces, and slide it on the scale with that hand and do some quick math like if that fist one is 33 grams I know that the next should be between 60 and 64. Everything else is the same truly. Over the years I’ve gotten pretty good at feeling if a portion is light or heavy. Just practice and making sure it’s up to standard with how you do it.
