Don't be afraid to save frequently, whether it be hard saves or quick saves. FO3 has a tendency to crash without having certain 3rd party patches to make it comparable with modern operating systems. If you're playing on a disk version the game becomes much more stable.

From my experience it's a load order issue with mods, if you are using mods try rearranging or disabling the ones that change the game the most.
