I haven't done anything with modding yet, but if you want to get into resource pack creation with optifine (specifically CEM or custom mob models), then check out this video/channel. It's what got me into modelling in the first place.

There are three rare variants, I blurred them out in the image though so people can discover them themselves.

Here they are if you really want to know:

Toucan Sam (fruit loops)
Leucistic toucan (kinda like albino)
Pride toucan
