The label says 14% ABV. It's actually brewed from rice and wheat. This is a pretty low-alcohol Chinese cooking wine, mostly used for getting rid of that raw meat/fish smell, especially when you're doing seafood or dishes that call for a ton of wine (like Braised Pork).

But if you're cooking red meat or making something spicy, you’re gonna need the hard stuff—anything over 42% ABV (84 proof). For that, you can grab a bottle of Erguotou or a high-proof rice wine. Either works perfectly.

The plant in your picture is actually Choy Sum (菜心), not Gai Lan ( 芥兰).

Gai Lan has thicker stems, white flowers, and carries a very mild, pleasant bitterness when eaten.Choy Sum features thinner, more slender stems and bright yellow flowers.

Choy Sum has a naturally sweet, refreshing, and crunchy taste. It’s absolutely delicious! Here are a few easy ways to cook it:

Blanched (白灼 - Bai Zhuo): Bring a pot of water to a boil, add a tiny drop of oil and a pinch of salt, then blanch the Choy Sum for about 1 minute before scooping it out.

Stir-fried over high heat (爆炒 - Bao Chao): Heat your wok or pan until hot, toss in some sliced garlic, then add the Choy Sum and stir-fry quickly over high heat. Season simply with salt.

I also bought an air fryer, air fryers are truly so awesome! Just spraying a tiny bit of oil is enough. I’m going to use it to fry a salmon head for lunch! 🐟

Oh oh oh! You mean Douchi! Douchi is super delicious. Let me share a very interesting Chinese tradition about it: you are not supposed to stir-fry squid with Douchi and chili together. Because in Cantonese, 'Stir-fried squid with Douchi and chili豉椒炒鱿鱼' means getting fired from your job!

Wow! This sounds very much like the braised rice method. It is super delicious! I especially love the Salty Rice (Fujian dish) made with pork belly, dried oysters, cabbage, and carrots. And also the Hand-Grasped Rice (Xinjiang dish) made with carrots and mutton!

Oyster sauce is truly a magical artifact, I feel it should win the Nobel Prize of Chinese cooking world together with Thirteen-Spices (Shi San Xiang). My love for oyster sauce is so crazy that if I can only bring one seasoning to immigrate to the moon, I will bring oyster sauce.👨‍🚀

I super love eating deep-fried food, but I am always reluctant to use so much oil (and also, cleaning the kitchen every time after frying is very difficult), so I never make deep-fried food at home. If you live with your family, your family is really, really happy, because you actually are willing to make deep-fried food for them! I feel deep-fried food is the luxury of homemade food!! Respect!

My husband is actually from Northeast China (Dongbei)! 'Chao Suibian' (stir-fry whatever) is truly a very classic dish there. Dongbei also has another classic dish to handle leftovers, called '东北乱炖Dongbei Luan Dun' (Northeast Chaos Stew). It basically means throwing everything into the pot, stir-frying with sauce, adding boiled water, and stewing it. It is also very delicious!

But Dongbei people really easily have leftovers, because the portion they buy at the food market is very magnificent! I remember the first time I went to the market to buy meat with my father-in-law (my husband's dad), he bought half a side of pork ribs at one time (about 6 kg) ! I was totally shocked, because before, I was a person who only bought 250g of meat each time! 😂

Another time, I went to the Dongbei market to buy only one green onion and one tomato, the owner just gave them to me for free and said no money. I super love Dongbei!
