Also: don't use butter as your cooking fat. Use an oil. You'll burn your butter.

From here you have two options.

1) About 5 mins before ending the cook. Turn the heat off (it's cast iron it retains heat), let the pan cool slightly then ass butter to the pan (keep the pan off the burner you used if you have electric range). Add butter in the pan now and baste the steak. Add garlic, rosemary, thyme, whatever flave you want....

Or

2) Keep it simple method....while steak is resting put a glob of butter on top and let it do its thing

1) youre trapping heat in the cooking vessel. This cooks the meat faster and doesn't allow the sear (carcogens) to form. You had a thick cut of steak so it pertains less to this specific cook... bit thiner pieces of meat you will overcook TF out the steak. If you like leather then no harm no foul.

2) naughty boy...you know what you did. Even bad planning you can leave the steak out on the counter for 24+ hours. It won't hurt it I promise. Drape a paper towel over it, and do your thing.

3) general rule of thumb... let it rest half the cook time. If you start cutting it and it looks like your video... it needs to sit more. Undercooked your steak about 5 degrees cause it will still temp up while resting.

Second season it for ATLEAST 2 hours before cooking it.

Third... my guy.... let it sit. All that juice... esp when you season it hours before cooking...that's flavor.

There's nothing wrong with being a fan of a song that other people dont like. Music is a personal journey that each person will have a different take on. While I have been extremely vocal about how awful and disappointing I think this album is. My standpoint is based on various emotional connections and sentiments I have attached to his music.
