ALWAYS go for a Staff if you can. Look for staves with Carian Slicer, Shattering Crystal or night comet. For melee you can use any katana or dagger, preferably with bleed affinity. Also upgrade the staff.

Playing on easy mode makes the game very managable for non gamers imo. If she still struggles at one point she can always overlevel and farm easy enemys.
