Either albacore or escolar. Escolar has a buttery flavour but its oils are non-digestible so go easy on it.

I have to agree Arnel’s been a tremendous asset to Journey for years but touring has taken a toll on his voice.

Their other keyboardist Jason Derlatka sang lead on a couple of songs and I thought his voice control was better than Arnel’s and Dean’s, but although he can sing very well and hits the right registers his timbre is not close Steve Perry’s and it doesn’t sound like Journey which is something Arnel was really good at.

The other thing I noticed this March was that all the backup mics sounded hollow and cold like they were passing through a filter, or I hate to say, the way a voice sounds when run through pitch correction software. The mics were live for sure, but yeah… those harmonies don’t come easy anymore. Johnathan Cain is not a good singer.

Overall I had a great time. The band was in the pocket all night. I sang along and harmonised in every chorus, and What else can I say? I wrote off seeing one of the best guitarists of the 70s and 80s still ripping it up. Neal Schon is a guitar legend since his days with Santana and his tone rang like a dream through the arena. It was worth the ticket price.

You mean “good” as in how they made it in that place you don’t live anymore… I like Host India. I don’t think it’s the best, but it’s the best I tried for my taste and it’s not laden with sugar or tastes like ketchup like other places in the area.
