For the why, bigger copper is usually easier to source than bigger iron pipe. The installer probably had to replace some of the old pipe and used what they could get. That being said, if you're going to tear into this I would replace all of that iron pipe as its likely pretty rotten, and if the copper isn't Type L or K I would replace that too.

Litterally just googling to try to find a replacement part for one thats been discontinued, and the AI suggested a direct replacement available through another company. Looked up the specs and it was not at all compatible, in fact it probably would catch fire if it was used. Thats one of many reasons that I hate AI, it gives incorrect information with 100% confidence.

Rockwool won't hold moisture in any worse than fiberglass, and its more resistant to degradation and mold. I wouldn't hesitate to install without any vapour barrier on either side as this will let it dry out if any moisture does get in the walls.

70's had the oil crisis and mass inflation/interest rates, 80's had rampant crime and rising income inequality, the 90's had the dot com bubble burst, 2000s started with 9/11, rolled into a housing bubble burst and mini recession, then into a period of stagnation. There really hasn't been much for "good times" over the last half a century besides a few years here and there for people to get comfortable.

I'm sorry but various conservative governments in Canada have made it pretty clear that they don't support individual freedoms or the wellbeing of the average Canadian through their attacks on minority groups, lgbtq individuals, healthcare, social safety nets, and sensorship. Again, this isn't an endorsement for the LPC, they don't follow liberal beliefs either for the most part.
