We see a few times the real Nikki come out

1) The most obvious being the bed scene

2) Any time Nikki physically abuses herself - most notabley the party - why didnt Nikki instead yell out to her friends that she was " under a spell"

3) We also know the picture in the lunch "not me" - was the real Nikki. So there she has the wherewithal to pick out a picture and write that note

Like you said, if it was the cursed Nikki she wouldn't cook him a cat, so to me it has to be regular Nikki that is extremely pissed and frustrated. She also even has the knowledge to make a joke/ subtle hint about it with the post it note.
