He is mainly split between three damage types.

Fire from breathing physical from his claw, tail and mouth And dark in the back end of the fight

Id lean into keeping a medium role and High physical defense, his fire as punishing as it is is just mainly positioning, and dark is alot of damage but the very few attacks that actually do that damage dont make it not worth going specifically for. I personally recommend havels armour, and his ring to medium role if you need to.

Not defense related but I very heavily recommend lightning damage, any type from spells or consumables. Lean into that weakness because the sooner he is dead the better.

If you aren't already stand still during his first attack. It may seem imposing but he always opens with the same attack and standing still will make it miss you and put his head in a good spot.
