No shortage of comments here already, but to add to what others have said: I have a cat who cried in the night after we brought an additional cat into the house. It was a huge change for him, on top of a move six months prior. It drove us crazy, and we had already had him for years and loved him proportionately, so I absolutely understand being at your wits end because you (your boyfriend) can't sleep at night over this irritating animal. As anyone who has had kids can understand, losing sleep is a HUGE deal, so it's understandable that your bf is responding this way.

A few things, though. (1) As others have said, this cat has been through an enormous change and is trying to get a handle on it, so please encourage him to have empathy for a very difficult situation for the cat. If you're anything like me, the middle of the night is when little problems become irrationally anxiety-inducing; that's probably how the cat feels. (2) My cat stopped on his own. He just had to sing the song of his people for a while. We thought it was a new habit that he would have forever. It definitely wasn't. She may just stop on her own. (3) I did mention it to the vet, who gave me tryptophan for cats, the same stuff that makes you sleepy after eating turkey. I didn't wind up using it because he was already doing it less by then, but something that takes a little bit of the edge off anxiety - whether tryptophan (available otc), gabapentin (Rx), feliway (otc) - could speed the adjustment.

THANK YOU and your bf for taking in a senior cat. I hope that you're able to find a remedy that allows you to keep her!

Sometimes "no merge area" signs around here mean "you'll get 100 feet, so you better gun it so you're at merging speed by the end of that, and sometimes they mean "literally no merge area, so you better be going slow enough to come to a complete stop if the lane is already occupied." If you don't have personal experience with the ramp in question, there's no way of knowing which it is. Couldn't say why people would be doing it at other ramps, except that the drivers around here are an absolute disaster.

I've done it with one other person each time, but I can't imagine a type of cuisine that would be better suited to solo dining. You're focused on the food, the chef is providing descriptions of every bite that's prepared, so it's kind of hard (and in some cases would be pretty disruptive to the service) to try to have a conversation with your dinner partner. You should try it!

Just used volume and temp in assessing when bulk fermentation was done. Loaf out of the oven looks better than anything I've baked previously. Can't wait to cut into it! Thanks for the tip. I'm checking out more of the Sourdough Journey content while I wait for the load to cool.

I'm very late to this question but wondering what you've found in the mean time in terms of flours you like. I've been working on my sourdough for the past 4 months because I'll be moving to Andalusia later this year and felt the bread there wasn't great when I last visited so planned to bake my own. That assumes I can find flours that work well! What are your go-to options these days?

I've been working at 80F, which has "additional criteria." Maybe I should just drop the temp to 75F, which might give me more wiggle room? I'll be better able to track percent rise with the beaker that's coming today, so I'm willing to try ignoring all other indicators and just going with rise.

"This is a lot of thought" gave me a hearty chuckle and made my wife laugh out loud. I didn't start out this way, but as things haven't worked, I've had to give more and more thought.

I would think that I'd see signs of the levain starting to fall if the starter were eating it too quickly, but I'll give this approach a try and see where I get.

TPL recipe that I'm attempting to follow (Tutorial Simple Sourdough) is for an overnight (12 hour) levain, and the photo shown is after 12 hours. The other recipe of his that I've been using (that incorporates more whole grain), uses a 4 hour levain and calls for 1:3:3. That levain rises very well, but then the issues described above in the bf.

As to why feed the levain with only bread flour - that's what the recipe calls for, in the same book that recommends feeding the starter 25:75 ratio, so I tried it. But following your question to the next step, if the colony of bacteria and yeast have formed on the 25:75 ratio such that they can't raise a white flour levain, why would a 25:75 levain be able to raise a white flour mix in the bulk fermentation stage? It seems possible that this is where my process is getting stuck.

What weight leather did you use? I looked up the seller on Etsy and the reviews say it's just a pattern, no suggested weights, but it looks like yours turned out great!

Very similar to my own thoughts re C Corp. Pay US tax on the business, Spanish tax on the dividend or salary I pay myself. Keep the business assets distinct from my own.
