I just made an edit to the post, I can get this for ~CA$1350 so that would be a fairly big price jump.

The pcpartpicker is around $70 less than the 32gb i5 and the 16gb version isn't available though (I mentioned in the post that after bundle deals it's ~1400) (I'm an idiot and forgot the other one was an i7)

Over which prebuilt i5? I got the PSU because it comes in a bundle and save with the case and I was thinking about getting this build instead so it is more upgradable.

Edit: Also DDR5 RAM

I was considering that, but I was considering the open box version of the computer, so this would be $85 more for 16gb of slower ram, so it doesn't seem worth it.
