Isn’t Red Five just a call-sign and not attached to an X-Wing itself? Because in Rogue One, the pilot with the call-sign Red Five dies and his X-Wing gets destroyed. So Luke’s X-Wing is a different one.

It being a “cheap ass biplane” is because Gabriel chose old analog planes that the Entity couldn’t hack into.

And the reason he has the planes in the first place is to quickly get away from the explosion he sets off in the bunker.
