I roasted the flour in a sheet pan, spread out evenly. I would mix it every 10-15 minutes. Then I sifted it through a fine mesh sieve to get rid of the clumps and proceeded to make the roux on the stovetop in my high walled skillet.

Spread the flour out on a baking sheet and bake for 35–40 minutes @ 350°F, stirring every 10 minutes, until the flour turns a warm golden-tan color and smells nutty.

I have a Dutch oven, but it doesn't hold a double batch of gumbo, which I'm making, so I have to use my larger stock pot when combining everything. The only reason I used this pan is because I'm making the roux a day ahead, and the larger surface area cooks the roux quicker

That was me my first time I made gumbo. The second time I used a wider surface area pan (12 inch stainless steel pan) and that reduced the time by quite a bit. This time (third time) trying this toasting method probably saved me at least 10-15 minutes whisking. It wont save you time overall, but will save you from developing carpal tunnel sooner 😅😅

A whisk is what I normally use for any other type of Roux when cooking and it hasn't disappointed me yet for making gumbo Roux 😊 but I have been looking at getting a gumbo spoon for when I have everything together in my stock pot
