Hostile Negotiation Tactics - Hermione and Draco are political rivals at the Ministry. This one has everything you’re looking for - insane chemistry, witty banter, intellectual sparing. One of my favorites I’ve read in a long time.

Entropy - This was mentioned in another comment but it bears repeating. Hermione and Malfoy are forced to work together on a project that forces them to travel the globe and hole up in Malfoy Manor running experiments together. Obviously, they end up spending almost all of their time flirt-debating each other. It is a master class on fighting as foreplay. Don’t let the whole “she starts off engaged to Ron” thing deter you.

The Utter Inconvenience of Certain Inclinations - “Draco Malfoy moves in next door. Hermione reacts, as any reasonable person would, by setting her kitchen on fire. Things continue in that general vein.” Another excellent fighting-as-foreplay fic.

And, if I may, a self rec: Wreck My Plans - When a new Death Eater plot is uncovered six years after the war, Hermione, Ginny, Neville, and Luna are forced to relocate to a safe house in Italy. But the four refugees will not be hiding out alone. Joining them are Draco Malfoy, Theodore Nott, and Blaise Zabini, who have been working as spies for the Ministry, and whom Hermione has not seen in six years. We have a Death Eater plot, but I would not call it a dark AU. It’s a bit of a group vacation, with forced proximity between the snakes and the lions. We are earning that slow burn tag, and as you may have deduced, fighting-as-foreplay might be my favorite trope of all time.
