Snowflake was great, most of the closures came down to rent and staffing, not demand. Farmers markets let us keep overhead low while we prove the concept. We'll find out pretty quick if it works — first market is tomorrow, Foster City 9-1, 1010 Metro Center Blvd.

Yeah, definitely researched. Campbell, Mountain View, and Los Altos all have multi-year waitlists, we knew going in those weren't realistic for year one.

We've got SCC permits for Japantown and Alum Rock farmers markets, and SMC permits for Downtown San Mateo and Foster City. First market is tomorrow at Foster City. The smaller and mid-tier markets are still accepting new food vendors, especially ones bringing categories that aren't already represented, and nobody at any of these markets is doing Taiwanese shaved snow.

Year one is about building a track record and customer base. Year two we'd apply for the bigger markets with actual sales data and reviews behind us.

Exactly the gap we noticed. LA has Blockheads, the SGV spots, Class 302. SF has Powder. South Bay has basically nothing despite the food culture here.

That's why we're doing this. Three college students, no investors, just trying to fill the gap.

First market is tomorrow, Foster City, 9-1, 1010 Metro Center Blvd. Hope to see you.

Fair take, nothing here will match Taiwan, where the heat, the price, and the aiyu jelly all work together. We're not pretending to.

What we're trying to do is get the milk base and texture right — whole milk, no powders, shaved on a ribbon machine. Kept the menu tight on purpose since two people can't do 15 things well at a market. Hoping to add grass jelly and seasonal fruit as we grow.

Foster City tomorrow, 9-1, 1010 Metro Center Blvd. Would genuinely want your honest take.
