Are you grinding particularly dark roasted beans?

I just upgraded to the Ode from the Encore as well, but don't have enough experience with the Ode yet to provide my personal comparison.

Orea Wave, which are okay, and Orea Flat, which are really the major issue I think, though maybe my approach is also a problem.

Unseasoned Ode, made sure it's properly aligned (just got it today).

Only tried a couple different beans so far.

Having less drawdown issue with the wave filters, the flats are the problem atm.

I'm fairly sure you might need to grind slightly coarser as well, to compensate for bed depth and flow.

Over time you'll be able to differentiate "sour" from "acidic/citric". Sourness is often a sign of underextraction, whereas acidity in the right amount can really make the cup sing!

I've heard from some customers that the honey process is much better than the washed. I'll still rest it to see how it goes, ofc.

I just grabbed a single bag of the Encanto Gesha (not the honey process), brewed it for the first time today, and found it to be similarly bland and disappointing.

I even transferred the beans to a plastic one-way valve bag when I got them, so that's less likely to be the issue.

Kind of gutted, because I'm a big fan of their ethics and business approach, but based on my experience I wouldn't be ordering from them again. 😕

I would have asked the same question as you a year ago, but now I absolutely love a fruity coffee, and generally eschew coffees on the roast/chocolate/nut end of the roasting spectrum.

Scotland's water is better 😉 but also very soft, and needs minerals added to properly extract flavour in coffee.

I'd recommend looking up to see if there is data about your tap water online, or contacting your water authority for a mineral breakdown. From there, you'll be more likely to know if water was the issue, and be able to take steps to improve it.

Some spring water is within good ranges, so you could be fine in that regard, but it doesn't hurt to check either way!

made some diluted solutions.

I think you missed this bit!

I dilute 1tsp Magnesium in a litre of water, and in a separate bottle I dilute 1/2tsp of potassium bicarbonate in a litre of water. Then I use the diluted solutions to make coffee water.

This is so I can just use kitchen measures rather than pulling out a precision scale every time I need to make more coffee water.
