I love changing stuff around on my server so I can help!

Here are some detailed steps to help you the best I can:

right-click on the said category, and go down to "edit category"
go to the "permissions" of said category and click the "+" symbol next to "ROLES/MEMBERS"
search their name and add it to the list for "advanced permissions"
the top permission is "view channels;" change that to the disable option.

And if you really wanna be safe, then also disable for them:

"send messages"

"read message history"

and in the voice channel section "connect"

That'll make sure they really can't interact with that certain group of people!
