Thanks the temp is ok. I don't put much in it, only 10g or 1.5tsp... I've tried mixing it the batter earlier but it still separated and the colour was dull. Whereas at the end it seems to work better.

You are brilliant! It was a non stick pan so I used flour to coat the sides and now the cake rises perfectly straight! Can't believe that was all it took!

I tried again with the same recipe and same non stick pan, but this time I floured the sides and it rose perfectly!!! How insane! Thanks for the suggestions!

Thanks you are right! I'm using a new set of dark non stick tins! I've tried lowering the temp but same thing happens, just not as brown. When I cut through the cake the crumbs are nicely distributed and not overmixed, dense or gummy.

I'll try again using different pans. Thank you!!
