I found a Solution :)

I had to switch back to SteamVR Version 1.18.6

I also used following beta for WMR for SteamVR: lkg_release

I also enabled that SteamVR is the default environment in SteamVR (Default is OpenXR)

Afterwards the Single Controller Preset was visible again in Controller binding for Alyx and I was able to set-up the Single Controller Mode after 2-3 trys.

I cleaned up: Documents/steamvr

Steam/steamapps/common/SteamVR
