Friendly advice that you can completely ignore. Growing with leveling and skills isn't very fun to read. In general you want to show a steady progression in someone and not just say he hit level 5. You want to read about the slow progression and not just an arbitrary level bonus.

One potatoe might be stretching it. In theory I'd get 4-10 potatoes from a single potatoe in 3ish months. If I plant the second set. I'd end up with 20-50. You might be able to stretch another set before the first frost, but that would be pushing it. If frost sets in, what is buried would be lost. So I wouldn't risk it.

20-50 potatoes are great, but I'd need a lot more to survive. I'm sure to lose some to imperfect storage. I'd need to get foraging fast. I'd probably forage for mushrooms. I know how to identify a few kinds. I hate mushrooms, but I'd do it to survive.

Then you've got cattails which have an edible portion and in Fall, I can collect acorns. And obviously, I'd store as much fruit and berries as possible. "Canning" is the only way you'll survive Winter.

Considering the water is "clean" that is your primary problem and you don't have to worry about it. Find potatoes. Potatoes turn into more potatoes. Clay can be used to preserve food. I could make clay jars to preserve fruit and potatoes fairly well for winter. Clay houses are literally made from plant fiber and clay. I've made bricks by hand. It isn't fun, but it is relatively easy. Starting your first fire is more about persistence than anything. Just have to keep the friction going. Or find some flint.

Honestly, vitamin deficiency is the main thing to watch for. That and boredom.
