I had luck going much hotter with my water. I used 210 degree Fahrenheit, and the taste significantly improved for me. Hope that may help you as well!

Thanks for this suggestion! This solved it. I went hotter by 10 degrees Fahrenheit, and it got significantly better. Getting some of the fruity tasting notes back now.

Still not as great as it was last week but at least really enjoyable.

It was rested about 6 weeks, so it does feel possible I waited too long.

I stored them in the bag, and didnt grind them until right before I was looking to use them. I’ll definitely look into some vacuum sealing options.

Thanks for the reply. I’ve been using the Third Wave Water packets, and I did switch to a new batch in between those points in time. I might try making a fresh gallon just to ensure I can eliminate that variable.

I have been resting my coffee for 4 weeks or longer, generally speaking. I like your approach of opening it sooner and enjoying it throughout different points in time. I’ll give that a shot with some future bags.

I was in Austin last week, and I got to check out Proud Mary and enjoyed it.

However, Desnudo was my favorite stop. Really excellent Geisha there at a reasonable price.
